Lime jelly cubes

Adapted from Heston Blumenthal

Heston likes to use these cubes in his perfect mash potatoes, but they are also a delicious inclusion in a plated dessert.

Friend’s children irritating you? Stick one onto a toothpick and tell them it’s mint flavoured.

Combine in a saucepan over a medium heat.

Heat to a simmer.

Blitz with a stick blender, 30 seconds.

Simmer, 4 minutes.

Pass through a fine sieve.

Cast in a wide, shallow container to a depth of between ⅕" / 5 mm and ⅖" / 10 mm.

Transfer to refrigerator until fully set, about 2 hours.
